Falafel Burger with Halloumi and Homemade Salsa

Since living together, Mr Hef and I have adopted the tradition of Fat Fridays, which pretty much always involves pudding and a lot of the time involves burgers. This week I forgot about Fat Friday and Mr Hef had already eaten his pudding, so we had a fat Sunday with half a pudding each. Falafel burgers are one of those things I hate to see on a menu at a restaurant, because 1. You know it's going to be dry and probably a bit gross and 2. I can make it at home so easily and so tastily! You can obviously make this vegan very easily by removing the halloumi and it will have more than enough flavour topped with fresh salsa (and maybe a bit of avocado too, because we always have time for avocados).  


Serves 2:

For the burger:

Chickpeas
2 cloves of garlic 
1 small red onion 
A handful of fresh parsley 
1 heaped tsp cumin 
1 heaped tsp coriander
1 tsp grated lemon rind 
1/2 tsp cayenne pepper
1 tsp chili powder
a drizzle of olive oil
2 slices of halloumi 
Some kind of burger bun

For the salsa:

A handful of cherry tomatoes, chopped
A small handful of coriander, finely chopped
1 small red onion, chopped, 
Lime

1. Preheat the oven to 200 degrees.
2.Drain the chickpeas and pop them in to a food processor with the garlic, onion, parsley, cumin, coriander, lemon rind, cayenne pepper, chili powder and olive oil and blitz until it's well combined. 
3. Shape the mixture in to 2 burger shapes and pop on to a chopping board for around 10 minutes to rest. 
4. While the burgers are resting make your salsa by putting your chopped tomatoes, coriander and red onion in to a bowl, squeeze over the juice from the lime and give it a good mix up.
5. Pop your falafel burgers on to a baking tray lined with greaseproof paper and bake in the oven for 20 minutes. 
6. When your burgers have around 5 minutes left, pop your halloumi in a frying pan and fry until golden brown on each side. 
7. Assemble your burger with the salsa, and anything else you want with it and serve with your choice of yummy side (we always have sweet potato fries).
