Sweet Corn Chowder


One good thing about my old blog being gone, is that I can post some of my old recipes, but new and improved and this is one of them. I always make it when I'm sick because it's spicy enough to blow away a cold, full of goodness and easy enough to make when all you want to do is lay in bed and have an Adventure Time marathon. I love it served with homemade guacamole and tortilla chips, because if I was to die from my terrible illness at least i'd die happy and full of avocado. 

Serves 2:

400g frozen sweet corn
1 small red chili, chopped
3 spring onions, chopped
800ml vegetable stock
Homemade guacamole and tortilla chips to serve

1. Defrost the sweet corn however you fancy (I stick mine in the microwave).
2. Put your defrosted sweet corn, chili, and spring onions in to a food processor and blend well.
3. Pop your sweet corn mixture in to a saucepan with the vegetable stock and boil for around 15 minutes.
4. Serve up with lots of guacamole and tortilla chips and enjoy!
