Scrambled Tofu Rancheros

I mentioned before that breakfast is my favourite meal, and my favourite breakfast meal is huevos rancheros, (or a breakfast burrito, but that's pretty much the same thing) but I don't like eggs, so this is with tofu scramble instead. I decided that I wanted it for breakfast the other day, but then I decided to go to 2 hours of yoga in the morning, then I realised that I didn't have any tofu, then I went to the shop but they didn't have any tofu, so I had to drive to a big shop, then I got home and didn't have any pasata so I had to walk back in to town to get some. So basically, I had this for lunch. I really, really love it, probably because, homemade guacamole = best thing ever, black beans = best thing ever and tofu scramble = best thing ever. Seriously, I could eat it every day. I originally adapted this recipe from the Channel 4 website, but it's gone missing so I can't link to it.


Serves 2:

For the topping

200ml pasata
50g sweet corn
100g black beans
1/3 chopped red onion
1/2 small red chili, chopped
1 tsp ground cumin
1/2 tsp coriander
1 handful of fresh coriander chopped
20g dairy free cheese (I used violife)
2 flour tortillas

For the guacamole

1 avocado, chopped in to little squares
3 cherry tomatoes, chopped in to little pieces
1/2 small red chili chopped
1/3 chopped red onion
1 handful of fresh coriander chopped
Juice of 1 lime

For the tofu scramble

A little oil
1/3 chopped red onion
100g tofu
A few pinches of turmeric

1. Preheat the oven to 200 degrees.
2. Mix together the pasata, sweet corn, black beans, onion, chili, cumin and both coriander's and give it a good old mix up.
3. Line a baking tray with greaseproof paper (it makes it so much easier to get off), then pop the tortilla on top, cover it with the topping, then grate the cheese on top and pop it in to the oven for 15-20 minutes, until the cheese has melted.
4. Make the guacamole by mixing all of the ingredients together, you can either mash it up or leave it chunky, I like it chunky for this recipe.
5. Start making the scrambled tofu by heating a little oil in a pan, then adding the onion to soften for a few minutes, then crumble the tofu in, add a little turmeric and fry for a couple of minutes.
6. Remove the topped tortilla from the oven, slide it on to a plate, top with the scramble and guacamole and enjoy!
