Banoffee Pots with Peanut Butter Caramel


Today was my first day off that I was actually spending at home in such a long time and I had grand plans for it. It involved pyjamas cuddling with my puppy and banoffee pie making. This was rudely disrupted by the police waking me up at 9am to tell me my car had broken in to, (I was still in my pink pug pajamas at the time) to which I laughed because all there is to steal in my car is an empty plastic bottle and a tape player, none of which were stolen. So instead of puppy cuddles and pyjamas time, I spent the morning trying to sort out getting a new windscreen. I did, however still manage to make some banoffee pies. I've wanted to make vegan ones for ages and had a plan in my head, it didn't go completely as I'd hoped and after 3 failed attempts at vegan caramel, I looked to the internet for help and found this recipe and adapted it from there (and when I say adapted I mean I used the only ingredient I had in the house and mixed it with peanut butter instead of almond butter). It worked super well and made the totally vegan banoffee pot of my dreams.

Serves 4:

For the coconut cream:

1 can coconut milk, left in the fridge, yummy thick cream on top scooped out.
50g icing sugar
A little bit of dark chocolate

For the base:
100g vegan digestives
40g melted vegan margarine
2 small or 1 super large banana, sliced

For the caramel:

3 tbsp peanut butter
3 tbsp maple syrup

1. Start by making the coconut cream, whip both ingredients together until thick and set aside in the fridge.
2. Make the base by popping the biscuits in to a food processor, blitzing until they've turned in to tiny crumbs, then pour the melted butter in and blitz again to combine.
3. Squidge the biscuit mixture in to either 2 500ml jars (if you like sharing) or 4 ramekins (if you don't), then top with the sliced banana.
4. Make the caramel by putting the peanut butter and maple syrup in to a sauce pan and cooking on a low heat, stirring all the time until combined.
5. Let the mixture cool completely then spoon on top of the bananas, take the coconut cream out and spoon that on top too, then grate a little chocolate on top.
6. Grab a spoon and enjoy!
