Refried Black Bean Tacos


I didn't do my post yesterday because I was being lazy, it rained all evening and Mr Hef and I sat in our warm cosy living room cuddling Travis and I got absolutely nothing done, I didn't even cook dinner. It was the kind of evening when even walking upstairs to get in to bed seems like a massive ask. So this is what it was supposed to be, organic refried bean tacos with fresh guacamole and salsa on homemade flour tortillas, as part of my challenge to go organic for September with Watirose and The Soil Association. I was really happy to find organic black beans, because they're my favourite of the bean variety and teamed with some organic avocado for guacamole and homemade tortillas, it's really freaking good (have I ever mentioned how much I love avocados? I could probably write a blog just about them). 

Makes around 8 tacos (you can decide how many people that serves, but I ate all 3 from the photo)

For the tortillas:

250g organic white flour
1 tbsp organic olive oil 
75ml water

For the Guacamole:
1 organic avocado, chopped
1/3 small red organic onion, chopped
4 organic cherry tomatoes, chopped
1/2 small red organic chilli, chopped
Handful coriander chopped
juice of half an organic lime

For the Salsa:

1/3 small red organic onion, chopped
12 organic cherry tomatoes, chopped
1/2 organic small red organic chilli, chopped
Handful coriander chopped
juice of half an organic lime

For the refried beans:

1/3 small red onion, chopped
1 organic garlic clove minced
1 can organic black beans, drained
1 tbsp organic chilli powder
1/2 tbsp organic paprika
1/2 tsp cayenne pepper

1. Start by making the dough for the tortillas, put the flour in a bowl with a pinch of salt, add the oil and water and bring together in to a rough dough.
2. Kneed the dough for around 5 minutes until it's no longer sticky and pulling off your hands, then split in to 8 balls and pop to one side.
3. Make the guacamole by chucking all of the ingredients in to a bowl and mushing with a fork, then do the same with the salsa ingredients in a separate bowl, but mix, don't mush.
4. Take your tortilla dough and roll each ball out, really, really thin, then get a frying pan on a high heat and cook them for about 30 seconds each side until bubbled and browned.
5. Make the refried beans by frying the onion and garlic for a couple of minutes, then add the black beans, chilli powder, paprika and cayenne pepper and cook for a couple of minutes until heated through , then mash them up a bit with a fork.
6. Pile the beans, guacamole and salsa on top of the tortillas and enjoy!
