Spinach Balls with Courgette and Spaghetti

I have a confession to make about this picture. It's actually from a year ago and from Instagram, but after making this meal totally organic, spending the time cooking it and taking photos. I realised that all of my photos were awful and when I made my new blog, I made a promise to myself that I would never use awful photo's, because they really bother me. So although this isn't perfect, it's a lot better than what I had and shows how totally delicious this meal is. This was really easy to make totally organic and is a big hit in the Hef household. I originally got the recipe from BBC Good Food, but I changed the ingredients to make them organic. We have it served with a lovely organic salad and homemade organic dough balls with garlic butter (you can find the recipe here, unfortunately not made in a pizza oven, but I'm sill working on Mr Hef to make me one) 


Serves 2:

For the balls

250g organic frozen spinach
1 organic egg
A pinch of freshly grated nutmeg
1 organic garlic clove, minced
70g fresh white breadcrumbs (stick some organic white bread in the food processor to make them)
25g organic strong cheddar

For the courgette pasta

150g organic spaghetti
2 tbsp organic olive oil 1 organic garlic clove, minced
1 organic courgette, grated
1 small red organic chilli, chopped

1. Make the spinach balls by cooking the spinach according to the instructions (either in the microwave or on the hob) squeezing ALL of the water out then dumping it and all of the ingredients in to a food processor and whizzing until you have a beautiful green mush, then squidge it in to around 8 balls.
2. Get some water for your pasta boiling, and get 2 frying pans out and drizzle a half of the olive oil in each.
3. Put the pasta on the boil for 12 minutes, add the spinach balls to one frying pan and the chili, courgette and garlic to another, turning the spinach balls regularly and stirring the courgette.
4. When the pasta is ready, drain the water and return the pasta to the pan, add the courgette and mix together well.
5. Transfer the pasta to a plate and top with the cooked spinach balls. It's now ready to devour with anything you want (we had organic salad and homemade organic dough-balls with garlic butter)
