Chocolate Fudge Banana Bread


Last week I was feeling a bit guilty about the lack of pudding in Mr Hefs diet, so I went to Sainsburys with the sole intention of buying him a cheesecake. Unfortunately whilst there I walked past the free from aisle and ended up coming home with a giant bag of snacks (don't worry I did get cheesecake for Mr Hef too). I don't actually eat a lot of sweets, chocolate and other snacks, so they just sat there for a couple of days making me feel bad until I decided to take action and bake them in to something. Armed with dairy free chocolate bars, fudge and bananas I whipped up some super simple banana bread, which I then offloaded to Mr Hef and people at work.

A bit of vegan margarine
3 ripe/starting to go a bit brown bananas
75g light demerara sugar
25g dark demerara sugar
70ml vegetable oil
200g plain flour
2 tsp baking powder
50g dairy free chocolate, chopped in to small pieces
50g dairy free fudge, chopped in to small pieces

1. Preheat your oven to 200 degrees and grease a loaf tin with vegan margarine.
2. Mash the bananas until squished but still a bit lumpy, then add the sugar and vegetable oil and give it a good old mix with an electric whisk (or a hand whisk, but it will take considerably longer).
3. Fold in the flour and baking powder until well combined and then fold in the chocolate and fudge.
4. Transfer the mixture to your greased loaf tin and pop in the oven for around 30-40 minutes, until it's nice and brown on the outside.
5. Once cooled, turn the loaf out, slice up and enjoy!

P.s Mike still proof reads every post I write (so if there's horrendous spelling and grammar mistakes it's totally his fault and not mine) and told me the end sentence needs to be finished with. "But not my sous chef Mike cos I'm a horrible vegan turd"
